BEER BREAD PIZZA

When you bought self-rising flour to make Beer Bread, did you portion out the remaining flour into ziploc bags, add sugar, and freeze in ziploc bags for easy access?

If you did, there is a pizza-in-the-making waiting for you.

If you didn’t, I’m disappointed in you, and now you don’t get to enjoy pizza with the rest of us. Go sit at the table and think about what you’ve done.

This idea came about when I was making a loaf of beer bread and decided to drizzle a little Tuscan Herb Olive Oil from The Olive Tap on top before baking. When we ate the bread, my editor/son said “What did you put on this to make it taste like pizza?” So the idea was born.

I had made tacos with ground turkey and had enough leftovers to make a taco pizza a few nights later.

For this pizza, I added some dried Mexican oregano and granulated garlic to the self-rising flour/sugar mixture and poured in a Dogfish Head Namaste (a Belgian-style white beer made with dried organic orange slices, fresh-cut lemongrass and a bit of coriander). You can use whatever beer you have on hand but adding a beer that compliments the flavors of the pizza you is always a good idea!

The challenge of using this dough for pizza crust is that it is STICKY!

Place a big sheet of wax paper or parchment paper on the cupboard and sprinkle a good coating of flour (all-purpose) on the paper and turn the dough out onto it. Sprinkle more flour on top of the dough and your hands. Turn the dough over a few times adding more flour as necessary until you can start pressing the dough into a crust shape/size without it sticking to your hands.  When the dough is spread out to fit your favorite pizza pan (coated with cooking spray). Place the pan, upside down, on top of the crust, slide one hand under the paper and one hand on top of the pan and flip it all over. Slowly remove the paper from the dough, scraping the dough off the paper as you go. Repair any tears or holes that are created by removing the paper.

Brush top of crust with olive oil (optional) and bake in a 350 degree oven for 10 minutes. Remove from oven and top with your favorite sauce and ingredients. For this pizza, we used taco sauce, seasoned ground turkey, onions, peppers, black olives, tomatoes and shredded cheese. Bake for an additional 20-30 minutes or until the center of the pizza is set. Remove from oven and allow to rest for 5 minutes. Top with shredded lettuce, crushed taco chips and sliced jalapenos.

Since I learned how to make beer bread in my high school German class, it is only natural that when I make this into a pizza I start thinking about other German food. I think my next experiment will be a bratwurst and sauerkraut pizza.
