Prosciutto-Wrapped Grilled Asparagus 

Growing up, my brothers said I was “picky” when it came to food. I did not like fresh sliced tomatoes, asparagus or eggs that weren’t scrambled. I pretty much ate everything else. Apparently, this made me a “picky” eater. I have over the years developed a love for fresh sliced tomatoes, but have yet to conquer the runny egg (although I’ve been tempted recently by those burgers topped with egg).

It was about 15 years ago, when my husband and I were staying at a bed and breakfast in Maine, that I was served a corn and asparagus frittata. I heard “asparagus” and was instantly disappointed. But I didn’t want to be rude and the dish looked really appetizing so I tried it.

Overcome dislike for asparagus? Check.

Turns out, I just didn’t like asparagus prepared in the same way my family liked it. My mom would make it creamed and she couldn’t make enough of it to satisfy my dad and brothers. I didn’t like the texture. Trying it as prepared in a different way, I discovered I really did like it. I now love it steamed … roasted … grilled … pickled for my Bloody Mary …

But I digress.

Probably my favorite way to prepare and eat asparagus is as pictured above.

Wrap asparagus with prosciutto and grill, turning 2-3 times until
prosciutto is crisp and asparagus is tender.

Yep … that’s the recipe.

The prosciutto is salty and has just enough fat to flavor the asparagus. If you have very thin stalks of asparagus, pile two or three stalks together in each wrap. Cut the prosciutto in half length-wise and gently stretch around the stalk(s) so it holds together.

As I mentioned in earlier posts, I love LaQuercia prosciutto. You can certainly substitute bacon but make sure you use a very thin bacon or it will take too long to grill the bacon to crispy and the asparagus will be overcooked.

This makes a great side dish for Smokey Maple Salmon, steak, marinated chicken or even for a brunch buffet. You know what else is good for a brunch buffet? Pineapple. That’s one thing my oldest brother never liked and will not eat to this day. Funny … he never was called “picky”!
