Peanut Butter Brownies

These peanut butter based brownies are loaded with chocolate chips and come together quickly in one bowl. This is a great recipe to get kids active in the kitchen!

Ingredients
  

  • 1/2 cup butter or margarine melted, but not hot
  • 1 1/2 cups sugar
  • 1/2 cup peanut butter chunky or smooth
  • 3 eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup chocolate chips or more

Instructions
 

  • Preheat oven to 350°.
  • Whisk together butter, sugar and peanut butter in a large bowl. Add eggs, one at a time, beating after each until smooth.
  • Gently fold in flour, baking powder, and salt until well combined.
  • Stir in vanilla and chocolate chips.
  • Pour batter into a well seasoned 12" cast iron skillet or greased 9-inch by 13-inch pan.
  • Bake for 25-30 minutes. Allow to cool before cutting into bars.

Notes

One Pan Method: Put the butter/margarine in 9"x13" pan and place pan in cold oven. Preheat oven. Remove pan from oven as soon as butter has melted. If butter is hot, allow to cool a few minutes before adding other ingredients. Carefully add peanut butter to pan (remember, the pan is hot), stirring to combine. Add sugar and stir. Continue adding ingredients as directed above, scraping the sides of the pan to combine evenly. Return pan to oven when fully preheated and bake as directed.
