Preheat oven to 250°.
Combine brown sugar, cinnamon, ginger, nutmeg, allspice/cardomom, oats, coconut, nuts, and chia/flax seed in a large bowl. Stir to combine.
In a separate bowl, combine apple sauce, honey/molasses/maple syrup, vanilla and maple flavoring. Stir to combine.
Drizzle the applesauce mixture over oat mixture and stir until oat mixture is well coated and granola begins to gather into clusters.
Spread granola onto two baking sheets and bake for one hour, gently stirring every 20 minutes.
Remove from oven and allow to cool. Stir in raisins and cranberries and store in air-tight containers or freeze in resealable plastic bags.
