Autumn Granola

Ingredients
  

  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice or cardamom
  • 3 1/2 cups rolled oats
  • 1/2-1 cup unsweetened flake coconut
  • 1-1 1/2 cup chopped nuts pecans, walnuts, almonds, pumpkin seeds/pepitas
  • 1/3-1/2 cup chia/flax seed blend optional
  • 2/3 cup unsweetened applesauce
  • 1/2 cup honey, molasses, and/or maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon maple flavoring
  • 3/4 cup raisins
  • 3/4 cup cranberries

Instructions
 

  • Preheat oven to 250°.
  • Combine brown sugar, cinnamon, ginger, nutmeg, allspice/cardomom, oats, coconut, nuts, and chia/flax seed in a large bowl. Stir to combine.
  • In a separate bowl, combine apple sauce, honey/molasses/maple syrup, vanilla and maple flavoring. Stir to combine.
  • Drizzle the applesauce mixture over oat mixture and stir until oat mixture is well coated and granola begins to gather into clusters.
  • Spread granola onto two baking sheets and bake for one hour, gently stirring every 20 minutes.
  • Remove from oven and allow to cool. Stir in raisins and cranberries and store in air-tight containers or freeze in resealable plastic bags.
