Verde Goddess Dressing

This simple, greek yogurt based recipe is a Mexican version of the traditional "green goddess dressing". Avocado is still front and center but cilantro and lime replace the traditional basil/tarragon profile and a small amount of jalapeño adds a little heat. Serve as a dressing on salads, a dip for vegetables/chips (sweet potato fries/chips as pictured), and/or a condiment for tacos!

Ingredients
  

  • 1/4 cup salad dressing/mayonnaise
  • 6 ounces plain greek yogurt
  • 1 large Avocado
  • 1 fillet anchovy
  • 2 tablespoons finely diced jalapeno
  • 1 teaspoon dried Mexican oregano
  • 2 tablespoons chopped fresh chives
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons finely diced shallot
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1-2 garlic clove(s)
  • 2 tablespoons lemon/lime juice

Instructions
 

  • In a food processor, combine all ingredients and pulse/puree until smooth. Chill until ready to serve.
