1. Using pre-shredded cheese - bags of shredded cheese contain an extra ingredient to keep the cheese from clumping together. It also prevents the cheese from melting smoothly.
2. Burner too hot - when the temperature of the ingredients gets too high it will cause the sauce to “break”.
3. Adding all the shredded cheese at once or too much at a time - adding a little cheese at a time and waiting for it to melt before adding more keeps the temperature of the sauce consistent. Adding it all at once drops the temperature of the sauce too far and then requires the sauce to heat all the way back up again which is not conducive to smooth melting.
And we like a smoooooth cheese sauce, don’t we? 😋

Have you ever tried elotes? This Iowa girl likes her sweet corn simple … butter and salt! BUT … the other night I had dinner at @azulmexcantina in Pigeon Forge, Tennessee and I could not resist trying the Elotes Ribs appetizer. Talk about entertaining food! Pick them up like ribs and munch off the chili-lime seasoned kernels with a lime crema drizzle and sprinkles of cojita cheese.
And since I won’t be having my fresh Iowa corn-on-the-cob for months, I’m really glad I found this to tide me over!

Happy Valentine’s Day, Friends! 💕
There’s a whole week before the official day but I couldn’t wait to set up this Vintage Valentine’s Tablescape.
• Inspired by one of my grandmother’s tablecloths, this scene is meant to embrace Iowa winter (even though it’s over 50 degrees today 😉) by using some of my wood trees and centerpiece bowl, candlelight, a deep red/green/white/caramel color scheme.
• The focal point of this table requires a big “Thank You!” to Kati at @walnut_stflowers in Dallas Center, IA. I showed her the bowl, grapevine, and crock i wanted to use and gave her a general description of my vision and she nailed it! I ❤️ the nod to spring with the pink “butterfly carnations” and the dogwood branches with the slightest hints of buds.
• A small charcuterie stand on each place setting encourages guests to start snacking while waiting for the main course.
• Heart-shaped “breadsticks” are easy to make and apple very tasty - kids love to make and eat these.
• Playing off the caramel color, a wood heart holds soft caramels that can be enjoyed at will or taken home as a treat for another day.
• White napkins are rolled up and “tied” with wood, heart ornaments that can be given as a party-favor!
• If it’s Valentine’s Day, I need chocolate … preferably a warm, fudgey dessert like this Hot Fudge Pudding Cake! This is one of the easiest and most impressive desserts, especially with a scoop of vanilla ice cream.
