We keep learning. My daughter-in-law taught me this kitchen hack and my waste-not-want-not-inner-chef is so grateful! Place a dry paper towel inside the bag/carton of fresh greens. Store in refrigerator so the paper towel side is on the bottom. Replace the paper towel at least every couple days. The paper towel absorbs the excess moisture, that often isn’t even visible, off the greens, prolonging the freshness. Quite seriously, this trick has, at a minimum, doubled the storage time of my refrigerated greens. 🥬 🥗 💯

I love to think about the space where my garden now is. We had to take down some large, splintered and twisted, cedar trees to create this space. Was there a farmhouse or a shed nearby? Did little kids play under the trees? I wonder these things because so far I have found a horseshoe, pieces of broken canning jars, marbles, and now a full-size wrench.

This is the sixth year we’ve tilled this space and I only found the wrench when I was using a hand trowel to plant onions. My trowel hit something. When I pulled it up, this whole wrench surfaced. How did it not get caught up in one of the three passes my husband made with the power tiller?

These are the things that I ponder while I’m gardening. I wonder how long those kids searched for their marbles and who got blamed for not putting that wrench back on the workbench. 🤔😂☺️

1. Using pre-shredded cheese - bags of shredded cheese contain an extra ingredient to keep the cheese from clumping together. It also prevents the cheese from melting smoothly.
2. Burner too hot - when the temperature of the ingredients gets too high it will cause the sauce to “break”.
3. Adding all the shredded cheese at once or too much at a time - adding a little cheese at a time and waiting for it to melt before adding more keeps the temperature of the sauce consistent. Adding it all at once drops the temperature of the sauce too far and then requires the sauce to heat all the way back up again which is not conducive to smooth melting.
And we like a smoooooth cheese sauce, don’t we? 😋

Have you ever tried elotes? This Iowa girl likes her sweet corn simple … butter and salt! BUT … the other night I had dinner at @azulmexcantina in Pigeon Forge, Tennessee and I could not resist trying the Elotes Ribs appetizer. Talk about entertaining food! Pick them up like ribs and munch off the chili-lime seasoned kernels with a lime crema drizzle and sprinkles of cojita cheese.
And since I won’t be having my fresh Iowa corn-on-the-cob for months, I’m really glad I found this to tide me over!
