Foodventurous: Opening Day

I woke up this morning to three wonderful things: a hot cup of coffee, a gorgeous sunrise, and a picture of Mike Matheny on espn.go.com/mlb!

My girlfriends talk about Kenny Chesney, Justin Timberlake, and Matt Damon. Don’t get me wrong … these are handsome men. But there is something about a man in a white uniform who can own a baseball cap.

In case I have lost you, Mike Matheny is the manager of my beloved St. Louis Cardinals. And don’t worry … my husband knows all about my crush. I like to make him and my boys roll their eyes when a game is on and I hush them whenever the camera crew gets a shot of Mike.

Almost-Mom’s Homemade Applesauce

It’s not hard to make applesauce, if you are using perfect apples. The reason hers is so incredible is that she uses the worst apples … those that have fallen to the ground and been bruised and need more cleaning than those picked directly off the tree. She has always been a champion for the underdog. These apples require no sugar (she may add a little if she feels it might be too tart). I have made it with her enough times to make a reasonable replica of hers. I am not quite to her level … I am not as industrious as she is. But there is always next year.

Chocolate doughnuts for breakfast? What’s not to love, right? In fact, there is a lot to love about this recipe. Oatmeal, bananas, low sugar … one mixing bowl (okay maybe two), no mixer, make batter the night before … doughnuts, muffins or bread loaf. It’s an all-time favorite at our house. The smell of these muffins baking in the morning would bring my boys out of their rooms to the kitchen to confirm that they would be enjoying this delicacy before heading off to school. And, usually, as an after-school snack.
